Grilled Asparagus Tacos
16 asparagus spears
4 corn tortillas
1/4 C. monterey jack cheese, shredded
1/4 C. cheddar cheese, shredded
Salt and pepper to taste
Olive oil
Directions
Soak asparagus in cold water for 30 minutes. Preheat grill. Place asparagus on hot grill and cook until they start to soften and have good grill marks. Remove from grill. Place 4 spears in each tortilla, sprinkle with salt and pepper and add 1/4 C. of the cheese. Fold the tortilla, brush the outside with olive oil and place the whole thing back on the grill off the heat for a couple of minutes or until the outside is crispy and the cheese is melted.
